Turmeric Vegetable Soup with Onions


This delicious and semi-sweet vegetable soup is so easy to make. This vegetable soup only has five vegetables that provide vitamins, minerals, and antioxidants.  If you have a hard time eating cauliflower or have a picky eater at home, then you will love trying out this recipe. By adding raw onions to this vegetable soup, you won’t taste or smell the cauliflower. Also, by adding turmeric, your whole family will benefit from the antioxidants and medicinal properties. Nonetheless, here is the recipe for making turmeric vegetable soup with onions.


Ingredients:


1 bag of carrots or 9 carrots
1 Cabbage
1 Cauliflower
½ of Green Bell Peppers
½ of White or Yellow Onion
Coriander
1 Lemon
2 Knorr Chicken Bouillons
1 Teaspoon of Turmeric
Salt (Optional)

Preparation:

Wash and remove the leaves of the cauliflower. Remove any dirt that is on the cauliflower. Chop the cauliflower in half and remove the cauliflower one by one. Wash and peel all nine carrots. Chop the carrots in small pieces. Wash one green bell pepper and remove the seeds of the pepper. Cut the bell pepper in half. Save the other half of the bell pepper for another recipe. Peel one white or yellow onion. Chop the onion in half. Save the other half of the onion for another recipe. Wash the cabbage and chop the cabbage in small pieces.

Next, in one pot add the cabbage, carrots, cauliflower, and green bell peppers. After that add water and two chicken bouillons. Then, add one teaspoon of turmeric.  Stir the vegetables occasionally so that the chicken bouillon and the turmeric mix with the water. While the vegetables are cooking, wash and remove the leaves of the coriander.
Add the leaves of the coriander to the vegetables that are cooking inside the pot.

Once the vegetables are ready, chop the raw onions in small pieces. Wash one lemon and cut the lemon in small slices. Pour the vegetable soup in several bowls. On the side add the lemon slices and the coriander to each bowl. On top of the vegetable soup add the raw onions. This soup serves four people.
