Eggplant for Diabetes and Your Health
Making eggplant is an
easy side dish to make at home. Eggplants help the digestive system and the

Ingredients:
½ of white or yellow
onions
One big tomato
Marinara Sauce
One tomato bouillon
One medium-sized eggplant
Garlic (optional)
Green Olives (optional)
Extra Virgin Olive Oil (optional)
First, wash the eggplant and the tomato. Second, slice off the ends of the eggplant. Third, slice it in half and make it in cubes. Fourth, slice the tomato and set it aside. Fifth, in one pot, add water and the cubed pieces of the eggplant.
Boil the eggplant for four minutes. Once it is soft and tender, remove it from the boiled water. In one skillet, add slices of onions and slices of one tomato. Add the marinara sauce. If the marinara sauce has no garlic, you can add a small clove of garlic.
However, it is optional. You can also add a small amount of olive oil or a little bit of water for the cooking process. After you have all the ingredients in the skillet, add the cubed pieces of the eggplant. Stir occasionally. After a few minutes, serve the eggplant side dish with green olives.
