Tasty Tuna Stuffed Bell Peppers
Stuffed bell peppers make a light lunch or a light dinner. This basic stuffed tuna bell pepper recipe is quick to make at home. There is no oven use which makes it easier to make as a beginner cooking at home. Red bell peppers were used but you can use any color bell pepper. The important aspect is how the tuna is prepared before stuffing the bell peppers.
Red and orange bell peppers tend to get sweet when it is cooked in boiling water. Begin by cutting the top of the bell peppers and remove the seeds. Rinse the bell peppers. In a pot, place the bell peppers and add water. Turn on the stove and cook the bell peppers for ten or fifteen minutes. Here is the recipe for the tuna filling for one stuffed bell pepper.
Ingredients:
1 can of Albacore White Tuna
Light Mayonnaise
1 Lemon
Radishes
Green Olives
1 White or Yellow Onion
1 Cooked Bell Pepper with a top
Open one small can of tuna. Drain the water or the oil before adding the tuna to a small bowl. In one bowl, add tuna, sliced onions, and sliced radishes. Next, add a few spoons of light mayonnaise and mix the tuna. Slice one lemon in half and squeeze the lemon juice on top of the tuna.
After that add a few slices of green olives and mix them with the tuna. Remove the cooked bell pepper and the top of the bell pepper from the pot. Use a spoon to fill the cooked bell pepper. Continue adding sliced radishes, sliced onions, or green olives with the tuna inside the bell pepper. Last, add the bell pepper top to the stuffed bell pepper. Repeat the same steps if you are making more than one bell pepper by adjusting the number of ingredients and portion sizes. Enjoy!
