Simple and Easy Chicken Work Meals
Leftover
chicken is quick and easy to make for lunch. You can also use leftover chicken
to make your work meals. Work meals do not require that many ingredients or spices,
especially if you have a thirty-minute lunch break. Depending on your schedule
at home, you can prepare basic lunch meals in advance for your lunchtime at
work. For example, these two chicken meals can be made one day before and put
together the next day.
If you like
chicken or want to celebrate National Chicken Month, then you will enjoy making
these lunch meals. Cooked chicken can last approximately three days and
spaghetti can last up to four days in the refrigerator. I save spaghetti
without the sauce in the refrigerator. However, use your sense of smell for
your leftovers to make sure it is fresh or get another person's opinion. Here
are the recipes.
Ingredients:
One packet of
chicken
Mayonnaise or
Miracle Whip
One apple
Baby spring mix
Bread
Olives with
pimentos
One box of
Spaghetti
Mozzarella cheese
Swiss cheese
Butter or extra
virgin olive oil
Chicken bouillon
or chicken broth
Black ground
pepper
Lemon juice
Preparation and
Cooking Time:
Follow the
instructions from the spaghetti box. In one pot, add water and the spaghetti.
While the spaghetti is cooking, prepare the chicken. Add chicken broth or water
with chicken bouillon. Then add black ground pepper to the chicken.
Wash and slice
one lemon. Squeeze the lemon slices with a juicer. Next, add lemon juice to the
chicken. After that wait approximately forty minutes before cooking the chicken
in extra virgin olive oil on a skillet. Cook the chicken and wait for it to
turn golden brown.
Once the
spaghetti is ready, use a strainer to remove the excess water from the
spaghetti. Serve the spaghetti, chicken, sliced olives, and mozzarella cheese in
small bowls. Save the leftover spaghetti separately from the chicken. Add the
sliced olives and mozzarella cheese in separate containers. In the morning,
toss the chicken, cold spaghetti, sliced olives, and mozzarella cheese in your
lunch box or Bento box.
Another work
lunch meal is an apple chicken sandwich. Wash and slice one apple. Remove the
core of the apple. In one bowl, add the sliced apples, shredded leftover
chicken, and mayonnaise or Miracle Whip. Then toast your bread and add baby
spring mix and Swiss cheese.
Use a spoon to
spread the apples and chicken onto the bread. Slice the sandwich in half. Add
green olives with pimentos on the side. Then, add the sandwich with the olives
in your bento box or lunch box. Prepare this sandwich in the morning before
going to work.
Make your lunch
meals simple and easy to make in the mornings before going to work. This will
allow you some time to relax without rushing and without worrying about what
you will have for lunch. You can eat the chicken spaghetti cold or microwave it
at work in a microwavable container. Make iced tea, lemonade, or hot tea to
take in a thermos with your lunch box. Happy National Chicken Month!
