Tofu Breakfast with Avocado and Corn (Better Breakfast Month 2025)
It
is Better Breakfast Month! The entire month of September can be dedicated to
changing your breakfast by adding vegetables, protein, grains, and other
healthy foods in the morning. Additionally, you can have brunch at the weekends
with family and friends. Today, I am sharing two tofu recipes using the same
ingredients. Alternatively, you can use pasta and tofu with the same
ingredients for a pasta breakfast or brunch.
The first recipe
is with corn and avocado on the side with tofu. The second recipe is with
leftover white cheddar cheese pasta, tofu, and corn with avocados. Nonetheless,
these recipes can be made in advance by making pasta and tofu ahead of time.
Also, making caramelized onions before making the tofu is also helpful. Here
are the recipes.
Ingredients:
Ground Garlic
Powder
Parsley Flakes
Ground Ginger
Ground Cumin
Ground
Mustard
Ground Coriander
Dill Weed
Firm Tofu
One Onion
Soy Sauce
A Jar or Can of
Mild Salsa
White Cheddar
Cheese Macaroni or other pasta
Corn
Avocado
Cooking oil
Spinach
Swiss Cheese or
White Cheddar Cheese
Recipe:
Begin by peeling
an onion and cutting the sides of the onions. Then slice the onion. In one
skillet, add cooking oil and add the slices of onions. Then stir the onions
occasionally until it is caramelized. Open one package of firm tofu and remove
the water.
Use paper towels
to remove the water from the tofu. Add the following spices: Ground Garlic
Powder, Dill Weed, Parsley Flakes, Ground Ginger, Ground Cumin, Ground Mustard,
Ground Coriander. In one skillet, add the cooking oil and the tofu. Turn the
tofu side to side every five to ten minutes. Cook the corn in water or use one
can of corn.
Then add soy
sauce to the tofu while it is cooking. Turn off the stove. Serve the tofu with
mild salsa, caramelized onions, slices of avocado, and corn. Another option is
to cook white cheddar cheese macaroni or macaroni without the cheese. Slice the
cooked tofu into cubes.
Cook spinach and
corn with macaroni. Add the white cheddar cheese. Mix the spinach and the corn
together with the cheese. Add slices of Swiss cheese or slices of white cheddar
cheese on top of the macaroni. Let the cheese melt.
In one plate add
the macaroni, small slices of avocado, cubed slices of tofu, and caramelized
onions. Also, you can use half of the cooked tofu for your breakfast or brunch.
The other half of the cooked tofu can be used for your lunch or for your next
breakfast. Refrigerate the leftover macaroni, tofu, and the corn. Nonetheless,
enjoy your tofu breakfast or brunch.
