Egg Jalapeño Sandwich & Avocado Salad


If you like egg sandwiches or want to add more eggs to your diet, you might like this recipe. You can make a half sandwich with eggs and a salad on the side. Arugula can be added to the salad for the skeletal system, for the digestive system, and for the immune system. Also, it might help to prevent constipation. Here is the recipe.

 

Ingredients:


Hard Boiled Eggs

Jalapeños

Mayonnaise or Light Mayonnaise 

Wheat Bread Slices or Other Type of Bread Slices

Tomatoes 

Arugula 

Baby Spring Mix 

One Avocado

One Cucumber 

Salad Dressing 

Black Pepper 


Recipe:


In one pot, add water and eggs with the shells. Boil the eggs. While the eggs are boiling in the water, make an arugula salad mixed with baby spring salad mix. Wash one tomato and wash one cucumber. Slice the tomatoes and the cucumbers.


Then in one salad bowl, add slices of tomatoes and cucumbers with arugula. Toss the salad. Then add baby spring mix salad. Slice the avocado in half and remove the avocado seed. Add avocado slices to the salad. 


After that add black pepper on top of the salad. Toast the bread. After ten to twelve minutes, turn off the stove. Wait for the hard-boiled eggs to cool off before peeling them. Next, peel the shells and slice the hard-boiled eggs. 


Slice one toasted bread in half. Spread mayonnaise onto the bread. Add the slices of the hard-boiled egg and slices of tomatoes. After that add the jalapeños. Lastly, serve your salad and half of an egg sandwich with a cold or hot beverage. 


Store any leftovers separately. Alternatively, you can use light mayonnaise or a mayonnaise substitute. You can add black pepper or salt depending on your eating preferences. In the example picture, Italian salad dressing was used onto the salad. Have fun making your salad and half sandwiches.
