Tofu Tacos with Potatoes (Better Breakfast Month)



Tofu tacos are delicious and quick to make. It can be made for lunch or for dinner. Also, it can be made for breakfast. Nonetheless, tofu tacos with potatoes can make you feel full, especially if you make these tacos for breakfast. The month of September is Better Breakfast Month, and you might want to try these tofu tacos for varying your breakfast meals.


Breakfast tacos have been popular throughout the years especially in Mexico, in Texas, California, and throughout the United States. There are many ways to make tacos for breakfast. Today, I am sharing with you my tofu tacos with potatoes. There is no sauce for these tacos, but you can add your favorite salsa or salad dressing. Here is the recipe for making these tofu tacos.


Ingredients:


Ground Coriander Powder

Ground Ginger Powder

Ground Cumin Powder

Ground Onion Powder

Ground Mustard Seed 

Whole Coriander Seeds

Parsley Flakes

Sweet Bell Peppers

Onions

Tomatoes

Baby Spring Mix Salad

Wheat or other Tortillas

Tofu

Free Dried Chives

Recipe:

Begin by preparing the tofu with the following spices: Coriander, Ginger, Cumin, Onion, Mustard Seed, and Parsley Flakes. After that on one skillet add olive oil or other cooking oil and add the coriander seeds. Next, add the tofu onto the skillet. After that cook, the tofu for ten to fifteen minutes. Once the tofu is cooked, slice the tofu into cubes.

Boil potatoes with the skin for about fifteen minutes or until it is soft. Once the potatoes are soft, slice the potatoes into cubes. Add sliced potatoes with the sliced tofu in a skillet for about five minutes and add freeze dried chives. After that turn off the stove and warm up your tortillas. Warm one wheat tortilla or other type of tortillas.

Then, on one plate, add the warm tortilla with baby spring mix leaves, sliced tofu, tomatoes, and potatoes. Fold the large tortilla in half and slice the tortilla in half. This recipe serves one or two people. Store leftover cooked tofu separately from the tortillas for four to five days. Have fun making your tofu tacos.
