The Benefits of Eating Eggs for Breakfast


Eggs are beneficial for brain health, cardiovascular health, and ocular health. It has vitamin A, vitamin B12, and Zinc. Additionally, it has Zinc which protects the eyes and helps you see at night. The best part is that it has Choline which is an essential nutrient for the brain. It helps the brain to build cells and to function. 

Therefore, eating eggs for breakfast is a good choice to begin the day. It will give you energy and eating 12-grain bread will keep you full too. Also, eggs have vitamin D which reduces inflammation and keeps your bones healthy. Adding fiber to your breakfast is also essential for maintaining your sugar and cholesterol levels. Here is the recipe for making these scrambled eggs. 

Ingredients:

1/2 of Red Bell Peppers

1/2 of Green Bell Peppers

1/2 of White or Yellow Onions

2 Large Eggs 

1 bunch of Spinach or 1 can of Spinach

1 bag of beans or 1 can of Refried Beans (Optional) 

1 bag of 12 Grain Bread 

Extra Virgin Olive Oil or another cooking oil

Cheddar Cheese (Optional)

Tomatoes

Preparation:

Wash and slice the bell peppers in half. Remove the stem and the seeds of the bell peppers. Use one-half of the bell peppers and slice it into smaller pieces. Add water in one pot and boil the bell peppers until it gets soft. Then, peel an onion and slice it in half. Use one-half of the onions and slice it into small pieces. 

Save the other half of the bell peppers and the onions for another recipe.  In another pan, drizzle a small amount of Extra Virgin Olive Oil or another cooking oil onto the pan and gently toss the onions. Stir the onions and let it sit. Stir frequently the onions until it turns golden brown. Once it is cooked, remove the excess of the oil with paper towels. Turn off the stove when everything is cooked. In another pot cook one bunch of spinach in water or skip this step if you are using spinach from a can. Cook one bag of beans and blend the beans to make refried beans or skip this step if you are using refried beans from a can. 

Cooking Time:

In one skillet, add the cooked bell peppers, grilled onions, tomatoes, and spinach with a small amount of Extra Virgin Olive Oil. Then, whisk two large eggs and pour the eggs into the skillet with the vegetables. Stir the eggs a few times to make scrambled eggs. After that, it is ready to be served on a plate with 12-grain bread and with refried beans. The refried beans are optional however beans have plenty of fiber too.
