Zucchini Vegetable Soup


Eating Zucchinis will help with the inflammation caused by rheumatism. Zucchinis improve the health of the eyes and for the thyroid. Zucchini is also called Italian Squash which has Vitamin A, Vitamin C, Vitamin B6, and antioxidants. This sweet vegetable can be used as a side dish, in soups, salads, and pizza. Here is the recipe for making this zucchini vegetable soup. 

Ingredients:

1 Italian Squash
2 Yucca Root
One bag of carrots
A few cilantro leaves
2 Chicken Bouillons or 2 cans of chicken broth
1 Cabbage

Wash and peel the carrots. Then, chop the carrots into small pieces. Wash the cabbage and chop the cabbage into small pieces. In one cooking pot, add the cabbage and the carrots in water. After that wash and peel the yucca root. 

Chop the yucca. Cook the yucca in a small cooking pot with water. Once the yucca root has been cooking for a few minutes,  remove the yucca from the pot. Then, cut the yucca into smaller pieces. After that add the yucca to the cabbage and to the carrots. 

While those three vegetables are cooking in the pot, wash the Italian squash. Cut the Italian squash into small pieces and add it to the rest of the vegetables that are cooking. Then, add the two chicken bouillons or the chicken broth to the vegetables. After that add a few cilantro leaves. After an hour and a half, this soup will be ready to be served. This soup serves approximately four people.
