Summer Squash Vegetables Soup
Summer
squash is so easy to use in any recipe especially in soups. It has vitamins
such as B6, C, A. It has magnesium and potassium which is good for your bones
and for your heart. Also, it has fiber to aid in digestion. The best part is
that it is loaded with Phosphorus, which is good for your teeth, to repair cells,
filters out waste from your kidneys. Here is the recipe for making this summer
squash vegetable soup.
Ingredients:
1 Summer Squash
1 bag of
carrots or 9 carrots
1 Bunch
of Parsley
1 Cabbage
1 Bunch
of Cauliflower
2 Yucca
Roots
2 Chicken
Bouillons
1 Teaspoon
of Turmeric
1
Teaspoon of Curry
1 Lemon

First, wash
all the vegetables. Second, peel and chop the carrots, yucca roots, and the summer squash. The summer squash does not have to be peeled and it is okay to eat the skin of this vegetable. Third, remove the leaves of the cauliflower and remove each cauliflower one by one. Fourth, remove the leaves of the parsley. Fifth, in a big pot, add water and add the summer squash and carrots.
Sixth, chop the cabbage into small pieces. Add the cabbage into the pot with the summer squash and carrots. Next, add the parsley. Cook the yucca roots in a smaller pot with water. Once, the yucca roots are soft add the yucca roots to the pot with the rest of the vegetables.
After the vegetables have been cooking for a while, add the parsley leaves and the cauliflower. Then, add one teaspoon of turmeric and one teaspoon of Curry. After that add two chicken bouillons or chicken broth and stir the vegetables slowly. Continue adding water if needed. When all the vegetables are soft, serve immediately with a few lemon slices.
