Lentil Soup & Family Time (Eat Better & Eat Together Month 2025)
During
the autumn months, it can be difficult to find family time due to everyone's
schedules. Between sports activities, school activities, or changing a career
can be challenging to spend time with your family. As well as not finding time
to eat at the same time every weekend or during the week. However, this month
encourages you to eat better and to eat together as a family. It does not have
to be a big meal plan to spend time together.
Yet, it is
necessary to plan healthier meals depending on your schedule or plan your meals
ahead of time. Additionally, using ingredients that you already have at home to
make your family meals. Dedicate one day during the week to planning your
weekend meals and to planning your family entertainment. You can post on social
media by using the hashtag, #Eat Better Eat Together Month” to bring awareness
of family time. As well as bringing awareness of eating together as a family.
You can make
lentil soup and an egg taco for breakfast or for dinner. It can also be made
for lunch during the weekend. However, you can make this meal for brunch with
hot tea or other beverages. Nonetheless, you can make your lentil soup one day
before you make your egg tacos. Here is the recipe.
Ingredients:
Ground Cumin
Ground Coriander
Seed
Ground Curry
Chicken bouillon
or Chicken Broth
One Onion
One Celery
One Bell
Pepper
Salt (optional)
Pepper (optional)
Lentils
Eggs
Spinach
Tomatoes
Tortillas
Olive Oil or
Other Cooking oil
Preparation and
Cooking Time:
In one pot, add
water, lentils, sliced onions, sliced celery, and sliced bell peppers. Add
chicken bouillon, ground curry, ground cumin, and the ground coriander seed. If
you are using chicken broth, do not add water. Instead add the ground curry,
ground coriander seed, ground cumin, and the chicken broth to cook the lentils.
Add salt or pepper which is optional.
Then cook the
lentils. Continue adding chicken broth or water. In one skillet, add sliced
tomatoes and spinach. Open one or three eggs and remove the shells. Alternatively,
you can use egg whites.
Stir the eggs
with spinach and the tomatoes. Once the eggs are scrambled, warm up the
tortillas. After that, add a small bowl of lentil soup and a warm tortilla. Add
the scrambled eggs on top of the tortilla. Continue serving the soup and the
egg taco to your family.
Set your dining
table ahead of time. Play seasonal music. Have conversations with your family.
After having your meal together, you can watch a movie at home or have a
karaoke session. Avoid playing games on your cellphone by playing with game
boards, card games, or have coloring pages with cross words or word searches.
Lastly, practice drawing an animal or anything that you see.
You can
participate in National Eat Better and Eat Together throughout the entire
month. Have journals, a bingo game, or make a family pajama night as you have a
family meal together. Take pictures and have fun together. Make a family
scrapbook about eating better and eating together. Finally, write it in your
calendar or make a reminder to have a meal with your family.
